Hey everyone,

I started a batch of Ed Worts Apfelwein on the 10th of September, and it cleared a week ago, and there has been no airlock activity since. I know the recipe says to wait at least 4 weeks; is there something else going on inside the carboy? Can I bottle now and let it age in the bottle? I am mostly just wondering if it would taste the same if I bottle it now and let it age, since I want to free up my one carboy.

Thanks!

take a gravity reading. i mean most likely its done if no activity in a week but a gravity reading is your best bet.

I'd wait until you were sure it wasn't dropping any more lees, as any lees that fall later would be in the bottle and I don't like sediment in my bottles of wine or cider.

I'd also ensure it was done, of course, via hydrometer readings.
