I have a stalled batch of mead that I suspect is from too high of an OG so my plan is to pour some out, add some water, and throw in the last round of yeast nutrient and fermaid k. Would it help or hurt to also add some GoFerm?

I agree with Maylar. Go ferm is for rehydrating yeast. But I would also want to know some more about a wine that has stalled. What was the starting gravity? what is it now? What yeast did you use? What is the ambient temperature of the room? Do you know the pH of this wine? What are you fermenting? Did you adequately aerate the yeast during active fermentation?
