I found a killer deal on a beer tower for my kegerator and I was wondering if there is enough room inside a 3" single spout tower to drill a hole and add a second spout

If nothing else, you could stagger the second tap an inch or so to make room for the nut and elbow.

I changed mine to 3 taps. I just dropped the second two just under the first and off to the sides. It's a tight fit, but looks nice.
