I'm planning on making a batch of burnt mead before the end of the year and I've been thinking on how I want to go about it. At first I was going boil a whole batch of honey, but then I got to thinking about doing maybe 4/5 of the amount as burnt honey, and then adding the rest as uncooked after the must has cooled before I pitch my yeast. I haven't been able to find an example of anyone doing this anywhere so I don't know how it would turn out but I'm thinking it would add a nice extra layer of complexity to the finished mead. Any thoughts or suggestions?
