Hi! I’m planning to brew a batch of ale, unsure of style as of yet, with intentionally high esters for a distinct bubble gum or cotton candy flavor. I’d rather achieve it through yeast/hop combo rather than artificial. Any suggestions on yeast strains or hops??
 
I just looked up "bubblegum" in a beer styles app I have... mostly it's considered an off flavor. This is the description... "refers to the flavor profile of Bazooka Bubble Gum original flavor, a pink chewing gum, a sweet mixed fruit flavor dominated by banana and strawberry with fruit punch flavors."
Belgian yeast will give you banana, but it will come with other flavors too. Belma hops can impart strawberry but also citrus and melon....

It might take you a few tries to make something that isn't too awful.... Good Luck!

I would try a Hefeweizen yeast that emphasizes banana/bubblegum and then look at this article and do all the things to emphasize banana and minimize clove:

Maybe a 100% wheat beer since barley has more clove precursor. And then ferment warm to get the “off” flavor of bubblegum that some Hefeweizens definitely have.

The article suggests

  • Available as: White Labs WLP351, Wyeast WY3638, Gutmann
  • High production of isoamyl acetate, as well as high production of ethyl acetate. Tends to produce ”bubblegum” flavours
“W175 has generally a stronger banana flavor but also more ethyl acetate which can lead to a “bubblegum” flavor.”
 
The biggest pushers of ethyl acetate tend to be the Belgian ale strains. Something like BE-256/Abbaye, WLP500/WLP570, Belgian Ardennes etc, especially when fermented hot and slightly under-pitched.

As above, try a grist with decent percentages of oats and wheat. A clone of something like Tripel Karmeliet would probably be a good starting point, that beer is a bubblegum bomb.

I'm a bit taken aback that you want beer to taste of bubblegum, but I think I get what your aiming for. If I were trying this I'd use NZH-102 Superdelic hops. These are full of fruit and "candy" flavours and they also leave a perception of sweetness. I wouldn't want to muddy the water with a flavoursome yeast so I'd be using something quite neutral. Another approach would be to aim for biotransformation: try making it like a cold IPA by adding a good charge of Superdelic when fermentation is at its peak. Using a yeast like K-97 or even W-34/70 should bring about the changes you need. You could try splitting your batch to try out the two methods.

As I mentioned in your other post: go with weizen grist and proper strain (wyeast 3068, wlp300, wb-68), some sweet hops at flameout (pacifica was my choice) and ferment it in higher range.
Such combination gave me bubble gum bomb years ago. Post in PL, but you can use g.translator
