Got the recipe for one of my favorite beers from the brew master of a local brew pub. I scaled his recipe down from 14 bbls to this.

My LHBS does not carry Pauls, nor the crystals shown.

If I substitute the same quantities of 60 for the 65, 80 for 90 and 120 for 140, the color doesn't change much, but what about the flavors ?

Before I go back to the brewer and hope that he will offer to sell me some of his Paul's, should I be concerned that it's Pauls or Weyerman's or what ever my LHBS carries?

I appreciate your input.
