Hello everyone, I want to make a beer and use olive leaves. I'm thinking of making a simple Pale Ale and using the olive leaves at the end of the fermentation. After researching on the internet I ended up with 25-30 grams for a 23 liter beer. (6gallons)
Do you agree with this amount? How can I sanitize these leaves?
 
If the beer is over 3% ABV before you add the leaves, then that alone will keep many bad things at bay. But certainly not all. You could steep/soak them in a strong neutral tasting liquor of some sort first and then add everything or just the liquor with whatever it extracted from the leaves.

I've no idea what olive leaves will give your beer. But consider if they might be better added to the end of boil to fully extract everything from them. And also not have to worry if anything on them will infect your beer. Some things do extract better with heat.
