I'm getting ready to brew this today. This will be my second batch so I'm still pretty new to this. This kit came with some crushed two row, dark chocolate and victory malt, and oatmeal.

Can I steep the two row and chocolate and victory malt at the same time?

What should i do with the oatmeal? Do I have to do something different with that or steep it with my other malts?

Sounds like you've got a partial mash kit, which makes sense with an oatmeal stout. You'll have to mash the grains, which will involve holding them at a specific temperature in the correct amount of water. I've never actually done a partial mash (went straight from extract to all grain). I believe the all grain and partial mash forum has a sticky or two that will be helpful.

Actually, I just looked it up online. It only contains enough two row to convert to oats. There should be instructions in the kit on how specifically to steep the grains to achieve conversion.

The instructions tell me what to do with the malts but not the oatmeal. Can I steep them like I would the malts or what's the best utilization forthrm?

Take a look at the last page of this PDF: http://www.ldcarlson.com/public catalog/Brewers Best Recipes/1051.pdf

It's somewhat comparable to a partial mash. You need to use the correct amount of water and hold it around 152. Be careful if you have to turn on the heat to raise the water temperature part way through. You don't want the grain bag sitting on the bottom of the pot while applying heat.

So I do it just like I would steep the grains then? The link did not pull up but I think your trying to send me to the addendum page on steep to convert?

Also after I steep everything at the right amount of water, can I top my bk off to the whole 5 gallon amount or should I just top off the fermenter? I ask only because I have a big enough pot to boil the whole amount if I wanted.
