For Christmas this year I made family and friends some cooking wines. After stabilizing with potassium metabisulfite and potassium sorbate i was curious if I could bottle the cooking wines with the vegetables inside. For example, I made a Jalapeno Cooking Wine and I'd like to bottle it with a single jalapeno inside. Will the stabilizers/preservatives be enough to keep the wine from spoiling? I know that the alcohol percentage isn't enough to act as a preservative for the pepper, but would the potassium metabisulfite do it? If it is possible, would you do anything to the pepper before you added it?
