When it's time to bottle, how come some recipes call for dry malt extract and some call for corn sugar? Is there a big difference between the two?
 
not a huge difference as they both do the same thing. The sugar works fine, but the receipes that call for DME probably work out better. The purpose is simply to carb the beer.
 
The only difference from my experience is some times dme takes a little longer to carb up. You also use a different amount of corn sugar vs dme when you prime to bottle; just depends on the style of beer. In the end both will carb your beer.
