Ok, I'm not sure what is going on with my beer. I tasted my American ale. Tasted fine and had a great head. Tasted the next bottle and tasted flat. Anyone have some ideas?

I just keep trying another bottle until I find one that is carbed

That, plus it could be just one badly sealed bottle. I get that from time to time with my wing capper, but I've learned to spot them right away.
