It's Saturday night and the wife's out of town. My first brew (an IPA) has been fermenting for 11 days and is releasing one bubble every 50 secs (my next purchase is a hymtr) I was really hoping to be able to rack tonight. What happens if I go ahead and do it tonight?

If you are looking to bottle and still getting bubbles it is too early. Your fermentation is not complete. I personally wouldn't recommend doing anything without a hydrometer. If you have a LHBS or winemaking shop close by, go spend the 7-10 bucks and get one. Some of the more experience guys can probably tell you what to look for in order to bottle without one, but based on your bubble rate you probably have a few days left.
