Hi, I'm making mead which seems to have a bigger risk of exploding then beer. Maybe not but that's what it seems like. Either way, how do I know when my bottles are safe? For instance, if it's been 2 weeks without them exploding, is it safe to say they never will? Or am I never safe??!!

I've never had bottles explode on me, thankfully, but how long after bottling has it happened to other people?
 
exploding bottles only happen if you have either an infection or too much carbonation.

It can happen any time from a week after capping, all the way to months after if caused by infection.

With cider, exploding bottles tend to happen more if you make sweet cider and mess up the "yeast killing" step.
