So my bottles are in a closet thats about 60 degrees and sometimes drops down to the mid fifties, and occasionally goes up to 65. Is this warm enough to carbonate or did I screw it up?
 
Its a little cold. You did not screw up...it'll take longer to carbonate though.

If you can keep them closer to 70F for a full week, then it'd be ok to store them in that closet again.
 
Put a heating pad on low under em and monitor temp. 75 is too high, 70 is preferred. 65 will work. 60 or less doesn't work at all.
