Hello...Im a new brewer who just brewed my first all grain about two weeks ago and just had a question about bottle conditioning. I made the mistake of fermenting my first beer at to high a temp with nottingham(75+deg) and may have created some off flavors because of it but yet its recommended to bottle condition at higher temps like 70 deg or more, wouldn't bottle conditioning at higher temps cause off flavors with nottingham just as primary fermentation would have??

Thanks

Jamie.

Early on in the fermentation process higher temps cause the yeast to create funky flavors. But later in the process it actually encourages the yeast to clean up some of the off flavors they created earlier. That's why many brewers begin fermenting at a low temp and end at a higher temp.
