Getting ready to bottle a RIS this weekend. It has been in the secondary for a month, primary for three weeks. Plans were to put it in bottles, let it carbonate with a DME and stash the bottles away for aging. Do you think there'll still be enough yeast in suspension or do I have to re-pitch yeast at time of bottling? I was wondering if the 10.7% ABV would stress the yeast enough to cause them to go to sleep (Wyeast Scottish Ale yeast).

Thanks,

Jeff

I bet you will be fine. Keep the bottles warmer and maybe roll them around every week or 2. It may take a little longer to carb then normal but I bet you will not be wanting to drink these too early anyway.

Hadn't considered rolling the bottles every so often, thanks. You're right, probably will take longer to carb but I ain't popping a cap for a long time anyway.
