When you carbonate in the bottle do you ever actually see any gas bubbles forming from the added sugar ?

You might see some bubbles rising as a result of the existing carbonation in the beer nucleating into bubbles on the sugar crystals. But only in the very short term. But bottle conditioning is a non visible process.

I was bored and thinking too much, that's where the question came from and yes I did a plastic test bottle, just curious.

Keep in mind that the test bottle isn't the whole story. It tells you it has carbonated to some extent, but it may still need more time for the beer to be at its best.
