On my first attempt at making ale I made a brew that duplicates(2 witnesses)Centennial commercial ale. I used 2.5 PDs malted blue corn, 2.5 PDs 2 row and 1 pound brown light sugar, pitched safal 05, with 3 additions of 1/2 ounce centennial hop pellets. Anyone interested in growing a portion of their grain bill her’s the drill: buy seed, plant and let mature on the stalk and dry till fall/ winter, harvest ears and bag in breathable sack and hang someplace dry and warmer, leave about 3 months till kernels can be rubbed off, sprout, then dry (sun or electric), now it’s ready to grind and use. Not for everyone but…
