Blue Bunny Freezer for fermenting beer?

I think the traditional carboys or buckets would make better fermenters. :D You might be able to fit 2 or 3 into that freezer for keeping them cool for the fermenting time though. You'll need to move or remove the racks to make them fit and if you use carboys you'll want to block off the light so they don't skunk. An STC-1000 with a solid state relay would be nice to control the temperature.
 
The biggest question would be whether the coolant coils run through those shelves, in which case, bending them down without rupturing the coolant lines might be somewhat fiddly work.

Otherwise, yeah, what RM-MN said – slap a temp controller on it and black out that big glass door, and you should be good to go.

You probably can't rely on it without a temp controller – if its thermostat even goes up to fermenting temperatures it all, it probably won't keep them in as tight a range as you'd like.
