Mashed at 160 for 60 min

2.7 g Call
8.1 g CaSO4
0.5 tsp amylase
1 tbsp 5.2 stabilizer

0.75 oz Chinook @ 90 min
0.5 oz Chinook @ 60 min
1.0. Oz Chinook @ 30 min
1.5 oz simcoe pellets @ 15 min
2.0 oz simcoe @ flame out

I just moved this to secondary. Need to pick a hop for dry hopping. Could just add more simcoe? Other ideas? Wort is very rich, sweet, coffee, cacoa, a little bitter. Seems like earthy piney, woodsy notes would go well with this one. LHB stores have pretty good selections, so I'm all ears.

On another note, I calc this at 60% efficiency. Yikes. I did a gluten free take off on this the same day and got 90%. how's that possible? Too hot? Too short of mash? The gf was 120 min at 163 (although it is now stuck at 1.030)
