over the last 18 months as I've progressed from extract to PM to AG I have tried always to order and keep the ingredients exactly as the recipe called for. with a new purchase from hops direct of 4 lbs of hops I was wondering if any bittering hop can be subbed if the boil is 60 minutes? From what I read the flavor and aroma oils boil off over this time which would imply that any hop can be used for bittering (correcting for the AA) but as a gut feeling I would think that there are other factors etc that impact the taste and bittering? does bitterring with cascade vs willamette vs EKG vs cluster vs hallertauer make a difference. Any thoughts?
