My soon to be father in law ade some birch wine last year. Its really delicious and simple to make, butI have a question about collecting the sap. I tapped a tree and it did not start running right away. So I left the tap in and waited overnight. There's about four cups in it now, but I'll need more than that. I was wondering if anybody new anything about birch water and if it will go bad or not. It says on a website i have visited to add a campden tab everytime that you readd birch water to your storing container, but that seems like it would be a lot of campden tabs to me. Anyways, any help would be great!
 
Campden breaks down, so each addition to the storage container requires another tablet. You could freeze it.
