If I wanted to do a multiple step mash, say a hefeweizen with a ferulic acid rest, protein rest, then 60 min mash, would there be any issues just leaving the full volume of water and grains and just turning on my burner til i get to the target temp?

I guess my concern is that, from say 108 degrees to 120 degrees then to 152, the liquid will be subject to the heat between the degrees. Maybe I'm over thinking the process? If I am, please let me know. Just didn't know if the extended contact with various temperatures would have any unwelcome effects.

You can either do infusions to raise the temp between rests, or start with full volume and use the burner. If you use the burner, then be sure to stir constantly while heating to avoid hot spots and scorching the grain or bag.
