So far, I've mostly just been my husband's sidekick while he's brewing ... but I'd really like to strike out on my own :) I'm thinking about making a batch of mead.

What's a good recipe for beginners? I want something pretty much un-screw-up-able, if possible. Also, any tips or tricks you have to offer would be much appreciated!

Joe's Ancient Orange Mead (JOAM) is the default for new mead makers. No tips, no tricks, pretty much idiot-proof, and very tasty. You can whip up a batch in 10 minutes and be ready to drink it in 3-4 months.

Mead is just Water + Honey + Yeast. Get about 1.5-3# (pending alcohol level and potential sweetness) honey per gallon of water, plus a pack of wine or mead yeast, and it's done.
