I am starting to think about a bulk hop order and was wondering what domestic hops people like for German and Belgian style brews. Or if people would with confidence (not mere prejudice) steer me in the direction of getting the real thing. Or both.

Note: US developed varieties as well as domestically grown European ones would both be of interest to me. If US Saaz is the thing, let me know!

I am not fond of German (or UK) hops grown in the USA. US Tettnang and Hallertau do not, to me, taste much like the German articles. For German styles, I like Crystal, Liberty, Mount Hood, Saphir, and Sterling. Belgian, I tend to like delicate hops - Crystal, Santiam, Saphir (for witbier), Sorachi Ace (also for witbier), and Willamette.
