I tried searching for this but couldn't really find what I was looking for.

I want to get my brother a gift (brewing book) that explains malt types, hops, yeasts, adjuncts and other grains in detail and what they add to a beer.

I have heard Extreme Brewing or Radical Brewing, but want a book that explains basic and not common ingredients at the same time (in detail).

Thanks for the help!
 
I have found Dave Miller's home brewing guide (or something like that) to be very usefull... its more of an overall process but there is some on recipie formulation and what each of the components do.
