I finally got a proper fermentation chamber! Chest freezer with a Johnson A419 control. I'm pretty excited to see how much this will improve my brews. So I'm planning a Belgian Tripel and having never brewed one I need a little advice. The yeast that came with the kit is Safbrew s-33. Should I pitch 2 packets? The kit has 10 lbs. of fermentables. What temp. Should I ferment at? Should I raise the temp after primary fermentation? Please help! I want this one to turn out good instead of mediocre like the last half dozen.
