Hey guys,
I'm pretty slack at posting so thought I'd share this recipe. This is an experimental brew, so could end up terrible or it could be amazing - I guess time will tell! :mug:

After 5 days this has fermented down to about 1.007, sample tastes really nice, with lots of grapefruit/citrus notes - but still lots of spice and character coming through from the yeast. I have just dry hopped this so will report back in a couple of weeks once i have kegged it.

(Also i am aware this isn't really the ideal yeast for a Belgian IPA, but it was on hand and I just put straight onto the yeast cake)


6.5% // 55 IBU // OG 1.060 // 67 degree Mash

5.22kg Gladfield American Ale Malt (85.5%)
0.61kg Gladfield Wheat Malt (10%)
0.28kg Gladfield Light Crystal Malt (4.5%)

17g Columbus @ 60min
30g Amarillo @ 20min
33g Amarillo @ 10min
11g Nelson Sauvin @ 10min
21g Amarillo @ 5min
7g Nelson @ 5min

45g Amarillo @ 70C Whirlpool/steep for 15mins
15g Nelson @ 70C Whirlpool/steep for 15mins

WLP565 yeast cake from previous Saison

70g Amarillo Dry hop 5days
20g Nelson Dry Hop 5days

IMO Your yeast doesnt suit the Belgian IPa Style - Its more along the liune of a Hoppy Farmhouse Ale. Which to me suggests your 55 IBU is too high.
I've not used this particular strain, but in theory I would guess it dries out alot? Similar to other saison strains?

I have a house ale, which is 1.050 - 1.004 with WLp670 small bittering addition, with a good flameout and hefty dryhop.

for me if Im tryingto nail the Belgian IPA style, I would use WLP 550 or WY3522. perfect to play with hops, and can handle higher IBU.

I do like your hopping schedule amarillo/nelson should be tasty - the only suggestion i would make is maybe a layeringhops? centennial at 20min maybe?

Butthats just My opinion, and tastes differ, having not used that particular strain its harder for me to help, but can give you advice base on my experiences with other strains.....:):)
 
Cheers bro, yeah like I said I know its more of a Saison yeast, but it was on hand so figured id just reuse the yeast cake after i kegged my saison. I was going to use WY3522, but oh well lets just see how it goes... Will be interesting nonetheless! Good point RE the bitterness, not something I considered tbh - the sample didnt seem overly bitter so will report back. I could probably flick you a couple of bottles at some point given you are just in CHCH :)

Indeed, I'd love a bottle to try.
keep us posted, I'm particularly interested in the bitterness profile, with such a dry yeast.
