I forget all the places I read it now, but I've seen over and over again about the great care with which Belgian Cafe owners will pour their beer. Not only that every beer is supposed to be served in it's own glass, but also how every beer is supposed to be poured in a particular way. I even remember hearing that there is some school that actually trains bartenders in proper pouring, certifies them, and then checks in periodically to see if they are serving beer to there standards.

Well, I know some people would say all this is silly, (which I guess it kinda is), but I for one, am a fan of ritual... so, I would like to know more about this.

I've been trying to find videos of pouring rituals for different Belgian beers, but mostly all I'm finding is Stella Artois videos about there perfect pour. Clearly, Stella made a hell of a marketing strategy off this pouring business, but they were cashing in on something already there right?

I must be a total beer philistine, because I wouldn't mimic anything that first guy was doing. I'm hoping it's more show than theory.

And if you can't fit a 12 ounce beer in the glass in one try without it taking for freakin' ever, you need to rethink what you're doing, imo...

In Holland, the bartenders were deliberate in what the were doing. Each glass of beer had the exact same head when placed on the serving tray. He even used a tool to swipe the excess head off the top even with the rim of the glass. I was amazed at the precision.

Pilsner Urquell vids. There are three kinds of pour. The most interesting but one I never do is the on-purpose all foam (head). Each pour accentuates different flavors.

That video is just great. I love Prague, Iv'e been there seven times, and the Czech repuplic has IMO, the best lager culture in europe. Everywhere you go theres great cheap beer on tap.
 
I went to Poechenellekelder and moeder lambic (from the second and third vids) and god damn they know how to pour beers. They love a massive head on the beer over there but they managed to get each bottle to perfectly fill the glass. The draft beers were superb too. When you ordered a round they all came out identical and with this amazing fluffy head.
