Beer getting worse?

I was feeling lazy and thirsty a few months back and purchased a no-boil, bag o' wort kit and brewed it up. One month after bottling I cracked one open and it had a sharp bitterness that I attributed to hops and a serious case of chill haze. I'm starting to think otherwise now. The bitterness is getting stronger and I was wondering if a large tannin content from over heating the mash, which would explain the chill haze, could cause bitterness to increase.
 
All I can say is buy a real beer kit next time. Ya know, one that you boil.

I agree, although I've never used a no boil kit, it just doesn't make sense to me to make a beer without boiling the wort
 
Yuuup, last time I do that. Saves time and money, but really not worth it. Oh well, this summer IPA I made right after is tasting damn fine.
