Planning this one for around September. It's historically around the time of the barely harvest when these strong brews were made.....
Dragon's Milk
.5 lb. British Pilsner (Maris Otter)
.5 lb. American Crystal 40L
12 lb. Light DME
.75 lb. Honey (12 oz. clover)
2 oz. Centennial Hops
2 oz. Kent Golding Hops
2 oz. Chinook Hops
1 pkg. Pasteur Champagne Yeast (secondary)
1 pkg. Nottingham Yeast
1. Steep grains for 45 minutes
2. Add DME and honey
3. Add 2 oz. Centennial & Chinook; 1 oz Kent for 30 minutes
4. Add 1 oz. of Kent for 30 minutes
...looking at this recipe again, I may cut the DME down to just 10, but I'm not sure yet....
