Close them before you add water to the MLT.

Flooded the kitchen twice in one day.

Same applies to bottling buckets, lost about a pint till my shoe got wet.
 
Been there, done that a few times. I finally customized my BeerSmith Brew Steps to include - "Insert dip tubes and close all valves".
 
Just a couple of brews back I had started up a fly sparge and was sitting in my shop with my back to my brew rig - reading HBT - and after a few minutes started hearing a slight splashing sound behind me.

Without even bothering to take a quick look over my shoulder, I mentally chalked it up to...something "normal".

What a *******.

BK drain valve was open, and around a quart of first runnings was spreading across the shop floor...
