This is the brew I've made for an upcoming Basic Brewing Radio episode. I needed something, forgive the pun, mild to allow fermentation character to shine through for what I did on the experimental side. To be clear this is the recipe for the control or regular beer. It turned out quite well.

Recipe follows for 5.5 gallons with 70% mash efficiency.

1.037 Original Gravity
1.013 Final Gravity
3% abv
22 IBUs
18 SRM

2.75lb Maris Otter
2.75lb UK Pale
.5lb UK Crystal 90
.5lb UK Crystal 60
5oz Briess Carapils
5oz Briess Special Roast
4oz UK Pale Chocolate
2oz Midnight Wheat

Mash thickness 1.25 qts per lb, sparge with .5 qts per lb. Mash all ingredients except Midnight Wheat at 158 with mash falling to 156.5 across 1 hour. With 15 mins left in mash stir in Midnight Wheat and proceed normally. 15 min mashout at 169 and sparge with water at 169.

1oz East Kent Goldings @ 60 mins for 22 IBUs bittering.

Whirlfloc at 10 mins

Cool wort to 65 F. Pitch 1.3 liter starter of WLP007. Ferment at 67 F.
