By no means do I care about calories in what I brew but for the cider I currently have fermenting which is mostly for my gf and a friend who has celiac disease (no wheat) If I ferment 5 gallons of cider at 120 calories for an 8 oz seving and then back sweeten with another gallon of cider does the serving size jump to 240 calories?

No, I don't think so. Alcohol has lots and lots of calories, but the sugar is fermented out.

For example, say you have an OG of 1.060 for your cider, and it ferments totally dry. You should have 243 calories per 16 ounces just from the alcohol alone. If you then add sugar, which is not fermented because you've stabilized the cider, you will add the calories (the sugar) to it which will be in addition to the alcohol calories.
