Well I'm working on a batch of apricot wheat right now and all I have is a packet of Safale US-05. Will this work ok with the wheat LME?

This is a kit I got at a somewhat local brew store
6.6 lbs Coopers Wheat LME
1oz Amarillo 60min

Apricot flavoring(added at bottling/keg)

I don't want to wait for some different yeast to arrive.
 
It'll work just fine (American yeast=American Wheat Beer, Hefeweizen yeast=German Hefeweizen) US-05 will give you a clean ferment, meaning you won't get the flavors/aromas one would expect from a German Hefeweizen.

Since you're adding apricot extract, you probably want a clean yeast anyhoo.
