Apple Cinnamon or Fireball Recipe

I've seen a few different threads on this but didn't really find a definitive recipe. Looking to brew up a couple small (1 gallon) winter batches. Won't be ready this winter but if I can get them going now, should have plenty of finish time.

Go and buy some good cider, not apple juice and clover honey. 71B yeast
Mine is 2.5lb honey per gal

If you have a 5 gal carboy I'd use that instead of the one gallon jugs, you can always rack into the smaller ones for secondary then add 1 cinnamon stick per gallon, check after 3-5 days as cinnamon will quickly overpower the cider taste.
I just did 2 sticks in a gallon and removed them 2 days in because it would've taken over, I did leave the vanilla bean in for a week before removing. It's nice and will be a great winters treat for my wife and I.
