Hello> I made some Apfelwein a while back and I can't wait to try it. My question is; if I do not like the taste of young wine, when is the earliest my Apfelwein will be aged to drink? I thought I had to wait 6 months at least, but the wine competition post has me wondering.

Of course, the obvious is why don't you open a bottle. But if it tastes young I will be disappointed, so I thought I would ask.

It depends on your tastes... by your mention of knowing what young wine tastes like, and that you don't like it, I would guess you have a sophisticated palate. I suggest trying your first bottle at 6 mo.

Others are fine with the taste of young AW. However, it does taste like very young wine. It tastes the way a working winery smells. Not my cup of tea, so I wait for the fruits and maturity to show through.
