Apfelwein question

Hello,

I have a question regarding the infamous Edwort's Apfelwein. I am thinking about doing a batch this weekend, but wanted to make sure I get the right AJ. I was under the impression that normal store bought apple juice wouldn't ferment, is that the reason for all of the extra sugar? I was also thinking of doing brown sugar instead, and using an ale yeast.

Any input?
 
It will ferment with or without the sugar. The sugar just dries it out more and adds more alcohol.

Personally, I will be trying Brandon's Graff recipe next time I do up a cider.
