So I'm having a German themed party on March 3rd. If I started a batch of Apfelwein in the next couple days would there be any chance that it could be drinkable and enjoyable in about 5-6 weeks?

I know Ed's sticky recommends 3+ months but I'm not looking for perfect ... just enjoyable. Thanks!
 
Yes, you can have a tasty Apfelwein in 5-6 weeks. The first batch I made was good after a month.

I'll be honest though, it's really impressive after 3 months of conditioning. I cracked a bottle of it open the other night and wow, it's gotten a lot smoother and less acidic tasting.
