Wonder what the element rating is. IIUC, you have to dumb down the element to avoid scorching.

I have to imagine that it cannot heat very quickly, if only because there's a limit to how much power you can pull out of a standard outlet. Also I use a 30qt pot and it's just barely big enough---I often fill it all the way to the rim. I think 4 or 4.5 gallon batches would be no problem, but 5 is pushing it a bit.
