Any Ideas for my Kitchen Sink IPA?

I'm trying to make an IPA with all this left-over grain and hops.
Will that Belgian Biscuit do anything bad to this beer? I have more Vienna if anyone thinks I should swap anything.
I was trying to not go to my LHBS, but the only yeast I have is Wyeast 3711 french Saison. I was planning on using US-05. Any thoughts on using the French Saison?
Any other thoughts or ideas are welcome. Thanks!

Thanks. I'm just using up odds and ends and I have all these whole Citras. Thought they would help. I just never used that biscuit other than an eighth of a pound in a Belgian. It has been sealed-a-mealed for a while. Thought I'd use it up.

should be pretty tasty and complex. Maybe a bit on the malty side, but not overly so. balanced nice with the various hoppy - bitter flavors.
