Sorry if this has already been covered (100s of times, no doubt), but I'm having trouble understanding the off-flavor produced by over carbing. Based upon my research here (after the fact), it's clear that I burst carbed too aggressively. Maybe.

I've read many different descriptions of the off flavors produced when over carbing, but maybe my palate is strange. What I'm tasting is what I would describe as a bit what an ashtray smells like (yes it tastes like ash!).

Could this be a way to describe the flavor of over carbed beer?
 
From what I've read posted by folks that have been there, over-carbing produces a sharp(er) bite, but I don't recall anyone stating it had affected the aroma.

Definitely don't remember any "ashtray" notes being mentioned, but then again, maybe that's a bit obscure, given the trends wrt smoking...
