Ancient Braggot? (i.e. bread yeast in braggot)

Hey mazers and mazees,

I was wondering if any of you had experience with using bread yeast in braggots? I was thinking of simply taking a JAOM and replacing ½ the fermentables with malt. Is this a horrid idea?

Dunno. Try it and see. Better yet, do two batches: One with bread yeast and one with ale yeast. For ale yeast, I suggest Wyeast 1388 or US05. Then you can decide which is better in a side by side test.

In your place I would start making bread with US-05... problem solved!

I've made sourdough bread with Nottingham. Came out pretty good. No discernable flavor difference from bread yeast though.
