Trying to put together a recipe for an American Wheat and I feel like I'm missing something:

5lbs dry wheat extract
.6oz Cascade @ 60 min
.4oz Cascade @ 5 min
1/8oz lemon peel @ 5 min

I'm capable of doing partial mash so I can take any suggestions involving that into consideration.

I like some more maltiness in my wheats.

Cut down your wheat extract to 3 lbs and do a partial mash:

3 lbs wheat malt
2 lbs munich malt (or vienna malt, which is a little lighter)

That's funny, I was just researching and thinking about vienna.

I threw that into beersmith, and the gravity looks a little low though, 1.037 (3.6%), too low, or OK?

That doesn't make sense. Did you add the wheat MALT? (don't confuse with the malt extract, you need both.)

Oh wow I'm an idiot. Don't think my grain bag and pot can handle 5 pounds of grain to mash, but I think 2lbs of both wheat and vienna should fit and mash no problem.

And those calculations look good now:
1.048 OG
13.3 IBUs
nice light color of 5.7
