This is the best dark beer I've brewed thus far (been brewing for about 7 years). It doesn't really fit in any specific category, so it probably wouldn't win any competition, but it fits my taste (and maybe yours) to a T. Slightly bitter, rich chocolate, toasty as hell. The addition of sour malt is simply because of my water chemistry, so it is not necessary for the recipe.
Midnight Mass Porter OG-1.064 FG-1.014 ABV- ~6.6% IBU- ~60
6 lbs. extra light dme
2 lbs. victory malt
1.5 lbs. chocolate malt
1 lb. 2-row
.5 lb. special b-malt
.5 lb. sour malt
.5 oz. warrior hops (15.9aau) @ FWH
.5 oz. warrior hops (15.9aau) @ 60
.5 oz. amerillo hops (7.7aau) @30
.5 oz. simcoe hops (13.4aau) @ 30
S-05 yeast (2 packets)
Mash @ 150 for 45 min.
Boil 90 min.
Primary @ 60 degrees for 7 days
Primary @ 65 degrees for 7 days
Primary @ 75 degrees for 3 days
