Just one. Do it. Thoughts about mixing biscuit or something else into it? my only concern would be that with all of that crystal, it finishes a little sweet - worst case cloying.
 
I think the recipe is fine. I would ditch that 45 min hop addition and put it at 5 min or less and add some dry hops. I usually mash my BWs on the low end. 148-150 area.
