Would it be ok to use a stainless stell bulkhead/spigot on a 30 quart aluminum turkey fryer pot? Just curious...I seem to remember something about the two metals having adverse reactions when in contact with each other, but I may be wrong...

If you're talking about welding it in, ain't easy. Also, the aluminum will corrode rapidly. You'll be much better off with a weldless fitting.

Yeah, I'm DIY but already have the bulkhead & valve...trying to determine if I should put it on my aluminum turkey fryer pot or a save it for a keg-gle that I have yet to acquire...

You will be fine. I have two aluminum pots both with stainless ball valves on them.
