and recorded the first few steps. I thought you might find this interesting. Apparently this has never been done in the US before.

They mashed to extract tanins and aren't pitching yeast but letting it become infected. They won't sell for at least 2 years.

Thats kinda cool, wonder how it will taste. I enjoy there beers normally.
