I've been brewing IPA's and pale ales pretty much solely and I could use some inspiration. I'd like to brew something different with what I have on hand for a 5.5 gallon batch. Below are my current ingredients:

Base malt: lots of 2 row

2# of each of these:
Crystal 20
Crystal 40
Victory
Biscuit
Light Munich
Flaked Maize
Flaked Rye

Hops:
Perle
Cluster
Saaz
Cascade
Centennial
Amarillo
Sterling
Nugget
UK Kent Golding
Fuggles
Glacier

Yeast: I have Safale 05 as well as WLP810 San Francisco Lager yeast (I did do one steam beer).

I have an abundance of Nugget and Saaz, and would definitely like to use them in something. I cannot lager. I can ferment anywhere from 60-70 degrees.


I am pretty open to different styles. Any thoughts are greatly appreciated! :mug:
 
Without some darker specialty grains, what you have and the yeast you have limits you quite a bit. Depending on how much crystal you have you might be able to make an American amber. Or a British style American amber using the UKG and Fuggles. American mostly because you only have American yeasts.

I like to look at the recipes of Northern Brewer kits. If you go to the additional information tab it give instructions and ingredients. Look at ones you think you might like and check the ingredients. You might need to get some additional ingredients or yeasts.
 
Alright then, I can buy yeast. What would you recommend with a different yeast? I suppose I could add specialty grains as well, but I'd really like to work through the hops I have on hand (I was gifted a lot of them.) Thanks again.
 
I agree I think you're a little limited unless you get a few other things, but you wouldn't need too much. With some darker crystal you could make an amber as mentioned, if you get a little chocolate that could turn into a brown. With some roasted barley you could make a stout. You've got plenty of hops to work with for any of those (American styles with the yeast you have as mentioned). If you get a Belgian yeast you could make a Belgian style pale - I'd usually use pilsner malt but I think you could get away with 2 row as the yeast will be the dominant factory anyway. Then you could use your Saaz.
 
I make all my Belgian ales with 2-row, and they turn out fine to my taste. As stated, those beers are yeast showcases. You could also brew some English beers with your EKGs and Fuggles. You could keep brewing IPAs and just hop them differently than the standard West Coast citrus varieties. Nugget in an IPAs is nice, either all by itself or along with C-type hops. One of the best beers I ever brewed was pretty close to a Saaz-MO SMASH with English yeast, although you could brew something similar with 2-row, Victory and US-05.
