Can someone point me in the direction of a helpful thread portraying the detailed breakdown of proteins, ensymes, beta rests etc.?

I've got the basic steps down, but I need to understand exactly what is happening with the chemistry of all this. It's really interesting to me and it would help if I knew the pros/cons of mash temps, strike temps, and different mashing styles as well as sparge tehcniques.

I've checked the stickies and wikis, but most all of that is for the beginners and the basic steps. I need advanced chemistry here.

It's got to be here somewhere, can anyone help?
